To ensure service of clean, hygienic food on trains, Indian Railways’ kitchen in Mumbai Central railway station has taken the initiative to set an example. The base kitchen is now equipped with several gadgets. For the Rajdhani Express alone, the base kitchen supplies food for about 3,000 passengers, reported Financial Express.
In order to make the kitchen insect and dust-free, they have installed plastic curtains at the entry and exit points. A separate section to cook vegetarian meals has been created. To adopt modern ways of cooking, the cooks are using masks and gloves while preparation of meals. Proper packing and weighing of food is being done to ensure quality checks. A latest addition is computerised labelling.
The kitchen is fit with 24 CCTV cameras for full-time monitoring. To avoid cross-contamination of food, industrial pallets have been received. The Western Railways has said that it is following all the 12 rules set by the Food Safety and Standards Authority of India (FSSAI).
Some of the rules include having regular pest control, proper storage facilities for the food, using separate space and equipment for vegetarian and non-vegetarian food etc.
